Watermelon-Feta Salad

When I first saw this recipe, my reaction was blech! I never would have made it but my mom wanted to try it so we did. She found the Watermelon-Feta Salad recipe in the July/August 2012 Cooking with Paula Deen magazine.

You will need:
-1/4 cup lime juice
-1/4 cup chopped fresh mint (we finally got an excuse to use the mint from the garden!)
-1/4 cup minced chives (you know me...I left this out but I sprinkled it on my parents' servings)
-3 TBS olive oil
-10 cups cubed watermelon
-1 (8 ounce) package of feta cheese, crumbled

In a large bowl, whisk together lime juice, mint, chives, and olive oil. Add cubed watermelon, tossing to coat. Gently stir in feta cheese. cover and chill until ready to serve.


How simple is that? We used fat free feta and kind of mixed everything on our own without exactly following the recipe since it was just the three of us (the recipe makes 8 to 10 servings). It's really light and refreshing - perfect for summer! I'm happy to say, we'll be making it again. I was proved wrong!

  1. We use to eat water melon with feta cheese here in Greece, however we don't use any oil or anything else. Just water melon and feta and it's delicious!

  2. I don't know about this. Part of me thinks it would be awesome, but part of me is scared. I can't have feta while pregnant so I guess I will never now until next summer!

  3. Before I saw your post, I made this today. I used watermelon, feta and fresh mint. It was so fresh and tasty.
