Happy National S'mores day! I'm not too late, right? It's not over yet? I'm pretty close as it's almost midnight but, hey, it's only 8:12PM (as I'm writing) in California!
I have a stash of recipes that I want to try. The problem is they're all fatty desserts. Making them all when I wanted to (aka every week) would seriously enlarge my behind and that of my family members. We're a small family - there are only three of us - so making awesome cakes and batches of cookies and cupcakes isn't really a good idea when it's only divided by 3. That's why I LOVE parties! It gives me an excuse to make something and try it out and then split it between a whole bunch of people.
For a party I went to last weekend, I decided it was time to try this s'mores cake I saw on my friend Meg's blog last year. She got the recipe from her sister-in-law, Katy. I had to share because it was just SO easy to make!
INGREDIENTS:
-box of chocolate cake mix (your preference, I used Devil's food)
-bag of marshmallows
-sleeve of graham crackers + extra for decoration
-1/3 cup butter, melted
-1/4 cup sugar
-Hersey's chocolate bar
1. Put the graham crackers in a zip-lock bag and mash. In a bowl, mix mashed graham crackers with 1/3 cup of melted butter and 1/4 cup sugar. Spread along the bottom of a 13x9 baking pan.
2. Prepare cake batter according to directions on box. Pour over graham crackers.
{Optional} I was inspired by Katy and how she said she didn't like boxed cake mixes and always tries to do something different with them. She adds chocolate chips. I decided I would try to put in caramel. I imagined the only way to make s'mores better would be to have caramel s'mores so I added some globs of caramel topping and spread it through with a knife.
Yeah, it ended up not making a difference. It probably just made the cake more sugary. I was imagining something along the lines of gooey turtle brownies but the cake just absorbed it. Maybe I used the wrong kind of caramel? Or it just doesn't happen in cake?
3. Bake according to box directions.
4. Throw some marshmallows on top and put it back in the oven. I put it under the broiler on high. Be sure to watch it closely because they will turn from golden brown to black in an instant!
5. Sprinkle extra graham crackers on top and pieces of the Hersey's bar.
NOM! It was definitely a hit! It was a little too sweet (I think because of the added caramel) so I'd like to make it again with no caramel and maybe even mini marshmallows on top instead (it's definitely very sticky!). But who knows if I'll ever get around to it with all the other recipes I've yet to try...
